INSTRUCTIONS

  • 1 Preheat oven to 350ºF. Beat butter in large bowl with electric mixer on medium speed until light and fluffy. Add 1/2 cup of the confectioners’ sugar, vanilla, 1/2 teaspoon hojicha powder, 1/4 teaspoon of the cinnamon and ground ginger; beat until well blended. Stir in flour and pecans.
  • 2 Shape dough into 1-inch balls. Place 1-inch apart on ungreased cookie sheet.
  • 3 Bake cookies 15 minutes. Meanwhile, mix remaining 1 1/2 cups confectioners’ sugar, 1/2 teaspoon hojicha and 1/4 teaspoon cinnamon in medium bowl; set aside.
  • 4 Remove cookies from oven. Immediately roll hot cookies in sugar mixture. Place cookies on wire racks to cool. When cool, roll again in sugar mixture. Place on serving platter. Lightly dust tops of cookies with additional hojicha powder to serve.
